3 Ingredient Banana Pancakes

Ingredients (per person)

1 Banana

1 Tbsp Greek Yogurt

2 eggs

1tsp Vanilla Extract (optional)

Cinnamon to taste (optional)

Greek Yogurt to top (optional)

Fruit to top (optional)

Honey to top (optional)

Granola to top (optional)

Coconut oil or butter for the pan

Method

  1. Blend together banana, eggs, yogurt, and optionally the vanilla extract and/or cinnamon until blended.

  2. Heat coconut oil on a pan on medium/medium low heat

  3. Pour a spoon of the batter (around 2-3 table spoons per pancake at least) onto the pan and flip once golden

  4. Stack the pancakes and dress with optional greek yogurt, honey, granola, and fruits.
