Basque Cheese Cake
Ingredients:
4 eggs
315g (1.5 cups): Greek yogurt (A flavoured greek yogurt will make the cake sweeter)
55g (5 tbs): Corn Starch
To taste (optional): Liquid stevia - I used 3 drops vanilla stevia
1tsp (optional): Vanilla extract (not necessary if using vanilla stevia)
To top (optional): fruit and/or drizzled honey, agave syrup, maple syrup
Method:
Step 1: Heat oven to 375F/175C
Step 2: Blend everything in the blender
Step 3: Pour into a cake pan
Step 4: Cook in preheated oven for 50 minutes
Step 5 (Optional): Top with fruit and/or drizzle honey, agave syrup, maple syrup.
Enjoy! I topped with burnt cherries (heat in a pan with a tsp of agave syrup until lightly burnt) and agave drizzle.
